- Coriander - 1 teaspoon

- Chickpea flour - 100 grams
- Water - 100 milliliters
- Tomato sauce - 100 grams
- Feta cheese - 50 grams, crumbled
- Red onion - 1 small, thinly sliced
- Bell pepper - 1 medium, thinly sliced
- Fresh parsley - 2 tablespoons, chopped
- Olives - 30 grams, sliced
Steps
- Preheat the oven to 220°C (428°F).
- Cut the cauliflower into florets and pulse in a food processor until it resembles rice. Steam the cauliflower for 5 minutes until tender.
- In a bowl, combine the steamed cauliflower, olive oil, cumin, coriander, paprika, salt, black pepper, chickpea flour, and water. Mix well to form a dough-like consistency.
- Spread the cauliflower mixture onto a parchment-lined baking sheet, shaping it into a pizza crust about 1 cm thick.
- Bake the crust in the preheated oven for 20 minutes or until golden and firm.
- Remove the crust from the oven and spread the tomato sauce evenly on top.
- Sprinkle the crumbled feta cheese, sliced red onion, bell pepper, and olives over the sauce.
- Return the pizza to the oven and bake for an additional 10-15 minutes until the vegetables are tender.
- Once done, remove from the oven and garnish with fresh parsley before slicing and serving.
