Ingredients

  • Cauliflower - 400 grams
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chickpea flour - 100 grams
  • Water - 100 milliliters
  • Tomato sauce - 100 grams
  • Feta cheese - 50 grams, crumbled
  • Red onion - 1 small, thinly sliced
  • Bell pepper - 1 medium, thinly sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Olives - 30 grams, sliced

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Cut the cauliflower into florets and pulse in a food processor until it resembles rice. Steam the cauliflower for 5 minutes until tender.
  3. In a bowl, combine the steamed cauliflower, olive oil, cumin, coriander, paprika, salt, black pepper, chickpea flour, and water. Mix well to form a dough-like consistency.
  4. Spread the cauliflower mixture onto a parchment-lined baking sheet, shaping it into a pizza crust about 1 cm thick.
  5. Bake the crust in the preheated oven for 20 minutes or until golden and firm.
  6. Remove the crust from the oven and spread the tomato sauce evenly on top.
  7. Sprinkle the crumbled feta cheese, sliced red onion, bell pepper, and olives over the sauce.
  8. Return the pizza to the oven and bake for an additional 10-15 minutes until the vegetables are tender.
  9. Once done, remove from the oven and garnish with fresh parsley before slicing and serving.
