Ingredients

  • Artichokes - 2 medium
  • Olive oil - 4 tablespoons
  • Garlic powder - 1 teaspoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh lemon juice - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Prepare the artichokes by trimming the stems and cutting the top 1/3 off each artichoke. Remove any small outer leaves and rinse under cold water.
  3. In a small bowl, mix together the olive oil, garlic powder, cumin, paprika, cinnamon, salt, and black pepper.
  4. Rub the spice mixture generously over the artichokes, making sure to get some between the leaves.
  5. Place the artichokes in a baking dish and add the lemon juice and 1/4 cup of water to the bottom of the dish.
  6. Cover the dish with aluminum foil and roast in the preheated oven for 30 minutes.
  7. Remove the foil and roast for an additional 10 minutes, or until the artichokes are tender and slightly browned.
  8. Garnish with fresh parsley before serving.
