Ingredients
- Artichokes - 2 medium
- Olive oil - 4 tablespoons
- Garlic powder - 1 teaspoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh lemon juice - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 200°C (400°F).
- Prepare the artichokes by trimming the stems and cutting the top 1/3 off each artichoke. Remove any small outer leaves and rinse under cold water.
- In a small bowl, mix together the olive oil, garlic powder, cumin, paprika, cinnamon, salt, and black pepper.
- Rub the spice mixture generously over the artichokes, making sure to get some between the leaves.
- Place the artichokes in a baking dish and add the lemon juice and 1/4 cup of water to the bottom of the dish.
- Cover the dish with aluminum foil and roast in the preheated oven for 30 minutes.
- Remove the foil and roast for an additional 10 minutes, or until the artichokes are tender and slightly browned.
- Garnish with fresh parsley before serving.
