Ingredients

  • Basmati rice - 150 grams
  • Water - 400 ml
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Raisins - 50 grams
  • Almonds - 30 grams, chopped
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes before cooking.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and diced carrot to the saucepan, cooking for an additional 3 minutes until softened.
  4. Stir in the diced bell pepper, raisins, chopped almonds, ground cumin, ground coriander, ground cinnamon, turmeric, salt, and black pepper. Cook for another 2 minutes, allowing the spices to become fragrant.
  5. Drain the soaked rice and add it to the saucepan, stirring to coat the rice in the spice mixture.
  6. Pour in the 400 ml of water and bring to a boil. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15-18 minutes, or until the rice is cooked and the water is absorbed.
  7. Remove from heat and let the rice sit, covered, for an additional 5 minutes. Fluff with a fork before serving.
  8. Garnish with fresh chopped parsley and serve warm.
