- Basmati rice - 150 grams
- Water - 400 ml
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Raisins - 50 grams
- Almonds - 30 grams, chopped
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes before cooking.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and diced carrot to the saucepan, cooking for an additional 3 minutes until softened.
- Stir in the diced bell pepper, raisins, chopped almonds, ground cumin, ground coriander, ground cinnamon, turmeric, salt, and black pepper. Cook for another 2 minutes, allowing the spices to become fragrant.
- Drain the soaked rice and add it to the saucepan, stirring to coat the rice in the spice mixture.
- Pour in the 400 ml of water and bring to a boil. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15-18 minutes, or until the rice is cooked and the water is absorbed.
- Remove from heat and let the rice sit, covered, for an additional 5 minutes. Fluff with a fork before serving.
- Garnish with fresh chopped parsley and serve warm.
