Ingredients

  • Long-grain rice - 150 grams
  • Ripe tomatoes - 300 grams, chopped
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 300 milliliters
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped

Steps

  1. Rinse the rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and continue to sauté for another minute until fragrant.
  4. Stir in the chopped tomatoes, ground cumin, paprika, salt, and black pepper. Cook for about 5-7 minutes, until the tomatoes break down and form a sauce.
  5. Drain the soaked rice and add it to the saucepan, stirring to coat the rice with the tomato mixture.
  6. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes, or until the rice is cooked and the liquid is absorbed.
  7. Remove from heat and let it sit, covered, for an additional 5 minutes. Fluff the rice with a fork and stir in the chopped cilantro before serving.
