- Long-grain rice - 150 grams
- Ripe tomatoes - 300 grams, chopped
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Vegetable broth - 300 milliliters
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
Steps
- Rinse the rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and continue to sauté for another minute until fragrant.
- Stir in the chopped tomatoes, ground cumin, paprika, salt, and black pepper. Cook for about 5-7 minutes, until the tomatoes break down and form a sauce.
- Drain the soaked rice and add it to the saucepan, stirring to coat the rice with the tomato mixture.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit, covered, for an additional 5 minutes. Fluff the rice with a fork and stir in the chopped cilantro before serving.
