  • Basmati rice - 150 grams
  • Vegetable broth - 300 ml
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Canned chickpeas - 100 grams, drained and rinsed
  • Saffron threads - a pinch
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - a handful, chopped
  • Lemon - 1, juiced

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in warm water for about 15 minutes.
  2. In a medium-sized pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the diced carrot, bell pepper, and zucchini to the pot, cooking for about 5-7 minutes until the vegetables are slightly softened.
  5. Stir in the drained chickpeas, saffron, cumin, cinnamon, paprika, salt, and black pepper. Cook for an additional 2 minutes to combine the flavors.
  6. Drain the soaked rice and add it to the pot, stirring well to incorporate with the vegetables and spices.
  7. Pour in the vegetable broth, bringing the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15 minutes, or until the rice is cooked and the liquid is absorbed.
  8. Once cooked, remove the pot from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and stir in the chopped parsley and lemon juice before serving.
