- Vegetable broth - 300 ml

- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Canned chickpeas - 100 grams, drained and rinsed
- Saffron threads - a pinch
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - a handful, chopped
- Lemon - 1, juiced
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in warm water for about 15 minutes.
- In a medium-sized pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the diced carrot, bell pepper, and zucchini to the pot, cooking for about 5-7 minutes until the vegetables are slightly softened.
- Stir in the drained chickpeas, saffron, cumin, cinnamon, paprika, salt, and black pepper. Cook for an additional 2 minutes to combine the flavors.
- Drain the soaked rice and add it to the pot, stirring well to incorporate with the vegetables and spices.
- Pour in the vegetable broth, bringing the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15 minutes, or until the rice is cooked and the liquid is absorbed.
- Once cooked, remove the pot from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and stir in the chopped parsley and lemon juice before serving.
