Ingredients

  • Basmati rice - 150 grams
  • Water - 400 milliliters
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh coriander - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic, diced carrot, and red bell pepper. Cook for another 5 minutes, stirring frequently.
  4. Stir in the cumin, coriander, cinnamon, turmeric, salt, and black pepper. Cook for 1-2 minutes until the spices are fragrant.
  5. Drain the soaked rice and add it to the saucepan, stirring to coat the rice with the spices and vegetables.
  6. Pour in the 400 milliliters of water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15 minutes until the rice is cooked and water is absorbed.
  7. Remove from heat and let the rice sit, covered, for an additional 5 minutes. Fluff the rice with a fork before serving.
  8. Garnish with fresh coriander before serving.
