- Basmati rice - 150 grams
- Fresh tomatoes - 300 grams, diced
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 400 ml
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the diced tomatoes, ground cumin, ground coriander, paprika, salt, and black pepper. Cook for about 5-7 minutes until the tomatoes soften.
- Pour in the vegetable broth and bring the mixture to a boil.
- Drain the soaked rice and add it to the saucepan. Stir well, reduce the heat to low, cover, and let it simmer for 15 minutes or until the rice absorbs the liquid and is tender.
- Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and stir in the lemon juice and chopped parsley.
- Serve warm, garnished with additional parsley if desired.
