Ingredients

  • Basmati rice - 150 grams
  • Kosher sausages - 200 grams (sliced)
  • Onion - 1 medium (finely chopped)
  • Garlic - 2 cloves (minced)
  • Carrot - 1 medium (diced)
  • Red bell pepper - 1 medium (diced)
  • Tomato paste - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Vegetable broth - 400 ml
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a medium pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic, diced carrot, and diced red bell pepper. Cook for another 5 minutes until the vegetables are tender.
  4. Stir in the sliced kosher sausages and cook until they are browned, about 5 minutes.
  5. Add the tomato paste, cumin, paprika, turmeric, salt, and black pepper. Mix well and cook for an additional 2 minutes.
  6. Drain the soaked rice and add it to the pot, stirring to combine with the sausage and vegetable mixture.
  7. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes or until the rice is cooked and has absorbed all the liquid.
  8. Remove from heat and let it rest for 5 minutes. Fluff the rice with a fork before serving.
  9. Garnish with fresh parsley and serve warm.
