- Basmati rice - 150 grams
- Kosher sausages - 200 grams (sliced)
- Onion - 1 medium (finely chopped)
- Garlic - 2 cloves (minced)
- Carrot - 1 medium (diced)
- Red bell pepper - 1 medium (diced)
- Tomato paste - 1 tablespoon
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Vegetable broth - 400 ml
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a medium pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic, diced carrot, and diced red bell pepper. Cook for another 5 minutes until the vegetables are tender.
- Stir in the sliced kosher sausages and cook until they are browned, about 5 minutes.
- Add the tomato paste, cumin, paprika, turmeric, salt, and black pepper. Mix well and cook for an additional 2 minutes.
- Drain the soaked rice and add it to the pot, stirring to combine with the sausage and vegetable mixture.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes or until the rice is cooked and has absorbed all the liquid.
- Remove from heat and let it rest for 5 minutes. Fluff the rice with a fork before serving.
- Garnish with fresh parsley and serve warm.
