- Basmati rice - 150 grams
- Water - 300 milliliters
- Raisins - 50 grams
- Onion - 1 medium, finely chopped
- Olive oil - 2 tablespoons
- Cinnamon powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Almonds - 30 grams, blanched and chopped
- Fresh parsley - 1 tablespoon, chopped
Steps
- Rinse the basmati rice under cold water until the water runs clear to remove excess starch, then soak it in water for 15 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the cinnamon, salt, and black pepper, then add the soaked rice to the saucepan, stirring to coat the rice with the spices.
- Pour in the 300 milliliters of water and bring to a boil. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15 minutes, or until the rice is tender and water is absorbed.
- While the rice is cooking, soak the raisins in warm water for about 5 minutes to plump them up, then drain.
- Once the rice is cooked, remove it from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and gently fold in the plumped raisins and chopped almonds.
- Garnish with fresh parsley before serving.
