Ingredients
- Basmati rice - 150 grams
- Water - 300 ml
- Raisins - 50 grams
- Onion - 1 small, finely chopped
- Olive oil - 2 tablespoons
- Cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Almonds - 30 grams, slivered
- Fresh parsley - 1 tablespoon, chopped
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- Add the cinnamon, salt, and black pepper to the onions, stirring for another minute to release the spices' aroma.
- Drain the soaked rice and add it to the saucepan, stirring to coat the rice with the onion and spices.
- Pour in the 300 ml of water and bring to a boil. Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15 minutes or until the rice is tender and the water is absorbed.
- While the rice is cooking, in a small pan, toast the slivered almonds over low heat until golden, about 3-4 minutes.
- In the last 5 minutes of cooking, stir in the raisins to allow them to plump up.
- Once cooked, remove the saucepan from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork, mix in the toasted almonds and chopped parsley, and serve warm.
