- Basmati rice - 150 grams
- Red bell pepper - 1 medium, diced
- Yellow bell pepper - 1 medium, diced
- Green bell pepper - 1 medium, diced
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Vegetable broth - 300 milliliters
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, for serving
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak for 20 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and diced bell peppers to the saucepan. Cook for another 5 minutes, stirring occasionally.
- Stir in the cumin, paprika, cinnamon, salt, and black pepper, cooking for an additional minute until fragrant.
- Drain the soaked rice and add it to the saucepan, stirring to coat the rice with the spices and vegetables.
- Pour in the vegetable broth, bring to a boil, then reduce the heat to low. Cover and simmer for 15 minutes, or until the rice is cooked and has absorbed the liquid.
- Remove from heat and let it sit covered for 5 minutes before fluffing with a fork. Stir in the chopped parsley.
- Serve warm with a wedge of lemon on the side for added flavor.
