Ingredients

  • Basmati rice - 150 grams
  • Red bell pepper - 1 medium, diced
  • Yellow bell pepper - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 300 milliliters
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, for serving

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak for 20 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and diced bell peppers to the saucepan. Cook for another 5 minutes, stirring occasionally.
  4. Stir in the cumin, paprika, cinnamon, salt, and black pepper, cooking for an additional minute until fragrant.
  5. Drain the soaked rice and add it to the saucepan, stirring to coat the rice with the spices and vegetables.
  6. Pour in the vegetable broth, bring to a boil, then reduce the heat to low. Cover and simmer for 15 minutes, or until the rice is cooked and has absorbed the liquid.
  7. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork. Stir in the chopped parsley.
  8. Serve warm with a wedge of lemon on the side for added flavor.
