Ingredients

  • Basmati rice - 150 grams
  • Canned chickpeas - 240 grams (drained and rinsed)

  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Vegetable broth - 400 ml
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - a handful, chopped (for garnish)

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic, diced carrot, and red bell pepper to the saucepan. Cook for an additional 5 minutes, stirring occasionally.
  3. Stir in the ground cumin, coriander, paprika, turmeric, salt, and black pepper. Cook for another 1-2 minutes until fragrant.
  4. Add the rinsed chickpeas and basmati rice to the saucepan, mixing well to combine with the vegetable mixture.
  5. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and let simmer for about 15 minutes, or until the rice is cooked and liquid is absorbed.
  6. Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork and garnish with fresh cilantro before serving.
