- Carrot - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Vegetable broth - 400 ml
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - a handful, chopped (for garnish)
Steps
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic, diced carrot, and red bell pepper to the saucepan. Cook for an additional 5 minutes, stirring occasionally.
- Stir in the ground cumin, coriander, paprika, turmeric, salt, and black pepper. Cook for another 1-2 minutes until fragrant.
- Add the rinsed chickpeas and basmati rice to the saucepan, mixing well to combine with the vegetable mixture.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and let simmer for about 15 minutes, or until the rice is cooked and liquid is absorbed.
- Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork and garnish with fresh cilantro before serving.
