- Basmati rice - 150 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Zucchini - 1 small, diced
- Chickpeas - 100 grams, cooked or canned, drained
- Vegetable broth - 300 milliliters
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced carrot, red bell pepper, and zucchini to the saucepan. Sauté for another 5-7 minutes until the vegetables are tender.
- Stir in the cumin, cinnamon, turmeric, paprika, salt, and black pepper. Cook for 1 minute until fragrant.
- Drain the soaked rice and add it to the saucepan, stirring well to coat the rice with the spices and vegetables.
- Pour in the vegetable broth and add the cooked chickpeas. Bring to a boil, then reduce the heat to low and cover the saucepan.
- Simmer for 15 minutes, or until the rice is tender and has absorbed the liquid. Remove from heat and let it sit covered for 5 minutes.
- Fluff the rice with a fork and garnish with fresh parsley before serving.
