Ingredients

  • Basmati rice - 150 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 small, diced
  • Chickpeas - 100 grams, cooked or canned, drained
  • Vegetable broth - 300 milliliters
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic, diced carrot, red bell pepper, and zucchini to the saucepan. Sauté for another 5-7 minutes until the vegetables are tender.
  4. Stir in the cumin, cinnamon, turmeric, paprika, salt, and black pepper. Cook for 1 minute until fragrant.
  5. Drain the soaked rice and add it to the saucepan, stirring well to coat the rice with the spices and vegetables.
  6. Pour in the vegetable broth and add the cooked chickpeas. Bring to a boil, then reduce the heat to low and cover the saucepan.
  7. Simmer for 15 minutes, or until the rice is tender and has absorbed the liquid. Remove from heat and let it sit covered for 5 minutes.
  8. Fluff the rice with a fork and garnish with fresh parsley before serving.
