- Red bell pepper, diced - 1 medium
- Carrot, diced - 1 medium
- Onion, finely chopped - 1 medium
- Garlic, minced - 2 cloves
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Vegetable broth - 400 milliliters
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley, chopped - 2 tablespoons for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium pot, heat the olive oil over medium heat and add the chopped onion and garlic. Sauté until the onion is translucent, about 5 minutes.
- Add the diced red bell pepper and carrot to the pot, cooking for another 3-4 minutes until softened.
- Stir in the ground cumin, coriander, and paprika, cooking for an additional minute until fragrant.
- Drain the soaked rice and add it to the pot, stirring to coat the rice with the spices and vegetables.
- Pour in the vegetable broth, add salt and black pepper, and bring to a boil.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes until the rice is tender and the liquid is absorbed.
- Remove the pot from heat and gently fold in the sliced green olives.
- Let it sit covered for an additional 5 minutes, then fluff the rice with a fork and garnish with chopped parsley before serving.
