Ingredients

  • Basmati rice - 150 grams
  • Green olives, pitted and sliced - 75 grams
  • Red bell pepper, diced - 1 medium
  • Carrot, diced - 1 medium
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Vegetable broth - 400 milliliters
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley, chopped - 2 tablespoons for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium pot, heat the olive oil over medium heat and add the chopped onion and garlic. Sauté until the onion is translucent, about 5 minutes.
  3. Add the diced red bell pepper and carrot to the pot, cooking for another 3-4 minutes until softened.
  4. Stir in the ground cumin, coriander, and paprika, cooking for an additional minute until fragrant.
  5. Drain the soaked rice and add it to the pot, stirring to coat the rice with the spices and vegetables.
  6. Pour in the vegetable broth, add salt and black pepper, and bring to a boil.
  7. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes until the rice is tender and the liquid is absorbed.
  8. Remove the pot from heat and gently fold in the sliced green olives.
  9. Let it sit covered for an additional 5 minutes, then fluff the rice with a fork and garnish with chopped parsley before serving.
