Ingredients

  • Basmati rice - 150 grams
  • Onions - 2 medium, thinly sliced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 400 milliliters
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a large saucepan, heat the olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they become soft and caramelized (about 10-15 minutes).
  3. Add the cumin and turmeric to the caramelized onions, stirring well to combine.
  4. Drain the soaked rice and add it to the saucepan, stirring gently to coat the rice with the onion mixture.
  5. Pour in the vegetable broth, season with salt and black pepper, and bring to a boil.
  6. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15 minutes or until the rice is tender and the liquid is absorbed.
  7. Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork and stir in the chopped parsley before serving.
