- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a large saucepan, heat the olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they become soft and caramelized (about 10-15 minutes).
- Add the cumin and turmeric to the caramelized onions, stirring well to combine.
- Drain the soaked rice and add it to the saucepan, stirring gently to coat the rice with the onion mixture.
- Pour in the vegetable broth, season with salt and black pepper, and bring to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15 minutes or until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork and stir in the chopped parsley before serving.
