- Basmati rice - 150 grams
- Green or brown lentils - 100 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Bell pepper - 1 small, diced
- Tomato - 1 medium, diced
- Vegetable broth - 400 ml
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Rinse the basmati rice and lentils under cold water until the water runs clear.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced carrot, and bell pepper to the pot. Cook for an additional 3-4 minutes until softened.
- Stir in the diced tomato, cumin, coriander, turmeric, salt, and black pepper. Cook for another 2 minutes to combine the flavors.
- Add the lentils and vegetable broth to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
- After 15 minutes, add the rinsed basmati rice to the pot. Stir gently to combine, cover, and cook for another 10-12 minutes until the rice is fluffy and the lentils are tender.
- Remove from heat and let it sit covered for 5 minutes. Fluff the rice and lentils with a fork.
- Serve warm, garnished with fresh cilantro.
