- Basmati rice - 150 grams
- Vegetable broth - 400 ml
- Carrot - 1 medium, diced
- Zucchini - 1 medium, diced
- Red bell pepper - 1, diced
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Peas - 100 grams (frozen or fresh)
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent.
- Add the diced carrot, zucchini, and red bell pepper to the pan. Cook for about 5 minutes, stirring occasionally.
- Stir in the ground cumin, cinnamon, turmeric, salt, and black pepper, cooking for an additional minute until fragrant.
- Drain the soaked rice and add it to the pan with the sautéed vegetables. Stir to combine, ensuring the rice is well-coated with the spices.
- Pour in the vegetable broth and bring to a boil. Once boiling, cover the pan with a lid, reduce the heat to low, and simmer for 15-20 minutes, or until the rice is tender and has absorbed the liquid.
- In the last 5 minutes of cooking, add the peas to the rice, gently folding them in.
- Once cooked, remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork and stir in the chopped fresh parsley before serving.
