Ingredients

  • Basmati rice - 150 grams
  • Vegetable broth - 400 ml
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Red bell pepper - 1, diced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Peas - 100 grams (frozen or fresh)
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent.
  3. Add the diced carrot, zucchini, and red bell pepper to the pan. Cook for about 5 minutes, stirring occasionally.
  4. Stir in the ground cumin, cinnamon, turmeric, salt, and black pepper, cooking for an additional minute until fragrant.
  5. Drain the soaked rice and add it to the pan with the sautéed vegetables. Stir to combine, ensuring the rice is well-coated with the spices.
  6. Pour in the vegetable broth and bring to a boil. Once boiling, cover the pan with a lid, reduce the heat to low, and simmer for 15-20 minutes, or until the rice is tender and has absorbed the liquid.
  7. In the last 5 minutes of cooking, add the peas to the rice, gently folding them in.
  8. Once cooked, remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork and stir in the chopped fresh parsley before serving.
