Ingredients

  • Basmati rice - 150 grams
  • Vegetable broth - 400 ml
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Bell pepper - 1 small, diced
  • Zucchini - 1 small, diced
  • Fresh parsley - 30 grams, chopped
  • Fresh cilantro - 30 grams, chopped
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until soft and translucent, about 3-4 minutes.
  3. Add the diced carrot and bell pepper to the saucepan, cooking for another 5 minutes until they start to soften.
  4. Stir in the diced zucchini, ground cumin, ground coriander, salt, and black pepper. Cook for an additional 2-3 minutes until the vegetables are well combined.
  5. Drain the soaked rice and add it to the vegetable mixture, stirring to coat the rice with the spices and oil.
  6. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes or until the rice is cooked and all the liquid is absorbed.
  7. Remove the saucepan from heat and let it sit, covered, for another 5 minutes to allow the flavors to meld.
  8. Fluff the rice with a fork, then gently fold in the chopped parsley, cilantro, and lemon juice before serving.
