- Basmati rice - 150 grams
- Vegetable broth - 400 ml
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Bell pepper - 1 small, diced
- Zucchini - 1 small, diced
- Fresh parsley - 30 grams, chopped
- Fresh cilantro - 30 grams, chopped
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until soft and translucent, about 3-4 minutes.
- Add the diced carrot and bell pepper to the saucepan, cooking for another 5 minutes until they start to soften.
- Stir in the diced zucchini, ground cumin, ground coriander, salt, and black pepper. Cook for an additional 2-3 minutes until the vegetables are well combined.
- Drain the soaked rice and add it to the vegetable mixture, stirring to coat the rice with the spices and oil.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes or until the rice is cooked and all the liquid is absorbed.
- Remove the saucepan from heat and let it sit, covered, for another 5 minutes to allow the flavors to meld.
- Fluff the rice with a fork, then gently fold in the chopped parsley, cilantro, and lemon juice before serving.
