- Dried apricots - 50 grams, chopped
- Raisins - 50 grams
- Almonds - 30 grams, sliced
- Cinnamon powder - 1/2 teaspoon
- Cumin powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the soaked rice to the pan, along with the water, dried apricots, raisins, cinnamon powder, cumin powder, salt, and black pepper. Bring to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- Remove the pan from heat and let it sit, covered, for an additional 5 minutes to allow the flavors to meld.
- Fluff the rice with a fork, then gently stir in the sliced almonds.
- Serve hot, garnished with fresh parsley.
