Ingredients

  • Basmati rice - 150 grams
  • Fresh fava beans (peeled) - 100 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 300 milliliters
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, for serving

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and sauté for an additional 1 minute until fragrant.
  4. Stir in the cumin, coriander, paprika, salt, and black pepper, cooking for another minute to toast the spices.
  5. Drain the soaked rice and add it to the pot, stirring to coat the rice with the spices and oil.
  6. Pour in the vegetable broth and add the fava beans. Bring the mixture to a boil.
  7. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes or until the rice is tender and the liquid is absorbed.
  8. Remove from heat and let it sit covered for 5 minutes.
  9. Fluff the rice with a fork, stir in the chopped parsley, and serve with lemon wedges on the side.
