Ingredients
- Basmati rice - 150 grams
- Water - 400 ml
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Raisins - 50 grams
- Chickpeas - 100 grams, cooked
- Cumin powder - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the diced carrot, red bell pepper, and zucchini to the saucepan. Sauté for 5–7 minutes until the vegetables are slightly tender.
- Mix in the cumin, cinnamon, turmeric, paprika, salt, and black pepper, stirring well to coat the vegetables with the spices.
- Drain the soaked rice and add it to the saucepan, stirring to combine with the vegetables and spices.
- Pour in the water and add the raisins and cooked chickpeas. Bring to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15 minutes or until the rice is cooked and the water is absorbed.
- Remove from heat and let it sit for 5 minutes with the lid on. Fluff the rice with a fork before serving.
- Garnish with chopped fresh parsley and serve warm.
