Ingredients

  • Basmati rice - 150 grams
  • Water - 400 ml
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Raisins - 50 grams
  • Chickpeas - 100 grams, cooked
  • Cumin powder - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the diced carrot, red bell pepper, and zucchini to the saucepan. Sauté for 5–7 minutes until the vegetables are slightly tender.
  5. Mix in the cumin, cinnamon, turmeric, paprika, salt, and black pepper, stirring well to coat the vegetables with the spices.
  6. Drain the soaked rice and add it to the saucepan, stirring to combine with the vegetables and spices.
  7. Pour in the water and add the raisins and cooked chickpeas. Bring to a boil.
  8. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15 minutes or until the rice is cooked and the water is absorbed.
  9. Remove from heat and let it sit for 5 minutes with the lid on. Fluff the rice with a fork before serving.
  10. Garnish with chopped fresh parsley and serve warm.
