- Basmati rice - 150 grams
- Shrimp (peeled and deveined) - 200 grams
- Onion (finely chopped) - 1 medium
- Garlic (minced) - 2 cloves
- Red bell pepper (diced) - 1 medium
- Green peas (fresh or frozen) - 100 grams
- Olive oil - 2 tablespoons
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Cilantro (chopped, for garnish) - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- Rinse the basmati rice under cold water until the water runs clear. Soak it in water for about 15 minutes, then drain.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent.
- Stir in the diced red bell pepper and cook for another 3-4 minutes until softened.
- Add the shrimp to the skillet, followed by cumin, paprika, turmeric, salt, and black pepper. Cook until the shrimp are pink and opaque, about 5-7 minutes.
- Add the drained rice and green peas to the skillet, stirring well to combine all ingredients.
- Pour in 300 milliliters of water, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is cooked and water is absorbed.
- Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork.
- Drizzle with lemon juice and garnish with chopped cilantro before serving.
