Ingredients

  • Basmati rice - 150 grams
  • Shrimp (peeled and deveined) - 200 grams
  • Onion (finely chopped) - 1 medium
  • Garlic (minced) - 2 cloves
  • Red bell pepper (diced) - 1 medium
  • Green peas (fresh or frozen) - 100 grams
  • Olive oil - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Cilantro (chopped, for garnish) - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear. Soak it in water for about 15 minutes, then drain.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent.
  3. Stir in the diced red bell pepper and cook for another 3-4 minutes until softened.
  4. Add the shrimp to the skillet, followed by cumin, paprika, turmeric, salt, and black pepper. Cook until the shrimp are pink and opaque, about 5-7 minutes.
  5. Add the drained rice and green peas to the skillet, stirring well to combine all ingredients.
  6. Pour in 300 milliliters of water, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is cooked and water is absorbed.
  7. Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork.
  8. Drizzle with lemon juice and garnish with chopped cilantro before serving.
