- Basmati rice - 150 grams
- Zucchini - 200 grams, diced
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Vegetable broth - 400 milliliters
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it for 15 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Stir in the diced zucchini, cumin, coriander, paprika, salt, and black pepper. Cook for about 5 minutes, stirring occasionally, until the zucchini begins to soften.
- Drain the soaked rice and add it to the saucepan. Stir to combine with the vegetable mixture.
- Pour in the vegetable broth, bring to a boil, then reduce the heat to low. Cover and simmer for 15 minutes or until the rice is cooked and has absorbed the liquid.
- Remove from heat and let it sit covered for another 5 minutes. Fluff the rice with a fork.
- Stir in the chopped parsley and lemon juice before serving.
