- Basmati rice - 150 grams
- Mixed mushrooms (button, shiitake, and portobello) - 200 grams, sliced
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Bell pepper (red or yellow) - 1 medium, diced
- Vegetable broth - 400 ml
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent, about 3-4 minutes.
- Add the diced carrot and bell pepper to the saucepan, cooking for another 5 minutes until slightly softened.
- Stir in the sliced mushrooms and cook for an additional 5 minutes until they release their moisture and start to brown.
- Add the cumin, cinnamon, paprika, salt, and black pepper, stirring well to combine the spices with the vegetables.
- Drain the soaked rice and add it to the saucepan, stirring to coat the rice with the vegetable mixture.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit covered for another 5 minutes. Fluff the rice with a fork and garnish with fresh parsley before serving.
