Ingredients

  • Basmati rice - 150 grams
  • Mixed mushrooms (button, shiitake, and portobello) - 200 grams, sliced
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Bell pepper (red or yellow) - 1 medium, diced
  • Vegetable broth - 400 ml
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent, about 3-4 minutes.
  3. Add the diced carrot and bell pepper to the saucepan, cooking for another 5 minutes until slightly softened.
  4. Stir in the sliced mushrooms and cook for an additional 5 minutes until they release their moisture and start to brown.
  5. Add the cumin, cinnamon, paprika, salt, and black pepper, stirring well to combine the spices with the vegetables.
  6. Drain the soaked rice and add it to the saucepan, stirring to coat the rice with the vegetable mixture.
  7. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
  8. Remove from heat and let it sit covered for another 5 minutes. Fluff the rice with a fork and garnish with fresh parsley before serving.
