Ingredients

  • Basmati rice - 150 grams
  • Carrots - 2 medium, grated

  • Garlic - 2 cloves, minced
  • Vegetable broth - 300 ml
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Ground ginger - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for about 15 minutes.
  2. In a medium pot, heat the olive oil over medium heat, then add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic, grated carrots, ground cumin, ground cinnamon, ground ginger, salt, and black pepper to the pot. Sauté for an additional 3-4 minutes until the carrots are slightly softened.
  4. Drain the soaked rice and add it to the pot, stirring well to combine with the carrot mixture.
  5. Pour in the vegetable broth, bring to a boil, then reduce the heat to low. Cover the pot and simmer for 15 minutes, or until the rice is cooked and the liquid is absorbed.
  6. Remove from heat and let it sit covered for 5 minutes, then fluff the rice with a fork. Stir in the chopped parsley before serving.
