- Basmati rice - 150 grams
- Carrots - 2 medium, grated

- Vegetable broth - 300 ml
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Ground ginger - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for about 15 minutes.
- In a medium pot, heat the olive oil over medium heat, then add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, grated carrots, ground cumin, ground cinnamon, ground ginger, salt, and black pepper to the pot. Sauté for an additional 3-4 minutes until the carrots are slightly softened.
- Drain the soaked rice and add it to the pot, stirring well to combine with the carrot mixture.
- Pour in the vegetable broth, bring to a boil, then reduce the heat to low. Cover the pot and simmer for 15 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit covered for 5 minutes, then fluff the rice with a fork. Stir in the chopped parsley before serving.
