- Basmati rice - 150 grams
- Cèpes (porcini mushrooms) - 100 grams, fresh or dried
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Vegetable broth - 400 ml
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- If using dried cèpes, soak them in warm water for 20 minutes, then drain and chop. If using fresh cèpes, clean and slice them.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic, diced carrot, and sliced cèpes to the saucepan. Sauté for an additional 5 minutes until the vegetables are tender.
- Stir in the cumin, cinnamon, paprika, salt, and black pepper, cooking for another minute until fragrant.
- Add the basmati rice to the saucepan, stirring well to coat the rice with the spices and vegetables.
- Pour in the vegetable broth, bring to a boil, then reduce heat to low. Cover and simmer for 15 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork before serving.
- Garnish with fresh parsley and serve warm.
