Ingredients

  • Basmati rice - 150 grams
  • Eggplant - 1 medium, diced
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Vegetable broth - 400 ml
  • Cumin powder - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a large pan, heat the olive oil over medium heat and add the chopped onion. Sauté until translucent, about 5 minutes.
  3. Add the minced garlic and diced eggplant to the pan. Cook for another 5-7 minutes, stirring occasionally, until the eggplant begins to soften.
  4. Stir in the diced tomato, cumin, cinnamon, paprika, salt, and black pepper. Cook for an additional 3-4 minutes until the tomato is softened.
  5. Drain the soaked rice and add it to the pan, stirring well to combine with the vegetable mixture.
  6. Pour the vegetable broth over the rice and bring it to a boil. Once boiling, reduce the heat to low, cover the pan, and let it simmer for 15-20 minutes until the rice is cooked and has absorbed the liquid.
  7. Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork and stir in the chopped parsley before serving.
