Ingredients

  • Basmati rice - 150 grams
  • Artichoke hearts (canned) - 200 grams, drained and quartered
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Vegetable broth - 400 ml
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - a handful, chopped for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent.
  3. Add the diced carrot and green bell pepper to the saucepan and cook for an additional 5 minutes, stirring occasionally.
  4. Stir in the ground cumin, ground coriander, paprika, turmeric, salt, and black pepper, and cook for another minute until fragrant.
  5. Drain the soaked rice and add it to the saucepan, stirring to coat the rice with the spices and vegetables.
  6. Pour in the vegetable broth and add the quartered artichoke hearts. Bring the mixture to a boil.
  7. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15-20 minutes, or until the rice is cooked and has absorbed the liquid.
  8. Remove from heat and let it sit covered for an additional 5 minutes, then fluff the rice with a fork.
  9. Garnish with chopped fresh parsley before serving.
