- Carrot - 1 medium, diced
- Green bell pepper - 1 medium, diced
- Vegetable broth - 400 ml
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - a handful, chopped for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent.
- Add the diced carrot and green bell pepper to the saucepan and cook for an additional 5 minutes, stirring occasionally.
- Stir in the ground cumin, ground coriander, paprika, turmeric, salt, and black pepper, and cook for another minute until fragrant.
- Drain the soaked rice and add it to the saucepan, stirring to coat the rice with the spices and vegetables.
- Pour in the vegetable broth and add the quartered artichoke hearts. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15-20 minutes, or until the rice is cooked and has absorbed the liquid.
- Remove from heat and let it sit covered for an additional 5 minutes, then fluff the rice with a fork.
- Garnish with chopped fresh parsley before serving.
