Ingredients

  • Basmati rice - 150 grams
  • Vegetable broth - 400 ml
  • Almonds (slivered) - 50 grams
  • Raisins - 30 grams
  • Dried apricots (chopped) - 30 grams
  • Onion (finely chopped) - 1 medium
  • Garlic (minced) - 2 cloves
  • Cinnamon powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Fresh parsley (chopped) - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes before draining.
  2. In a saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and sauté for an additional minute until fragrant.
  4. Stir in the cinnamon, cumin, and turmeric, cooking for another minute to release the spices' aroma.
  5. Add the drained basmati rice to the saucepan, stirring to coat the rice in the spices and oil.
  6. Pour in the vegetable broth and add salt to taste. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-18 minutes or until the rice is cooked and the liquid is absorbed.
  7. While the rice is cooking, in a separate pan, toast the slivered almonds over medium heat until golden brown, being careful not to burn them.
  8. Once the rice is done, fluff it with a fork and gently fold in the toasted almonds, raisins, and chopped dried apricots.
  9. Serve the Riz aux Amandes warm, garnished with fresh parsley.
