Ingredients
- Basmati rice - 150 grams
- Vegetable broth - 400 ml
- Almonds (slivered) - 50 grams
- Raisins - 30 grams
- Dried apricots (chopped) - 30 grams
- Onion (finely chopped) - 1 medium
- Garlic (minced) - 2 cloves
- Cinnamon powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Salt - to taste
- Fresh parsley (chopped) - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes before draining.
- In a saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the cinnamon, cumin, and turmeric, cooking for another minute to release the spices' aroma.
- Add the drained basmati rice to the saucepan, stirring to coat the rice in the spices and oil.
- Pour in the vegetable broth and add salt to taste. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-18 minutes or until the rice is cooked and the liquid is absorbed.
- While the rice is cooking, in a separate pan, toast the slivered almonds over medium heat until golden brown, being careful not to burn them.
- Once the rice is done, fluff it with a fork and gently fold in the toasted almonds, raisins, and chopped dried apricots.
- Serve the Riz aux Amandes warm, garnished with fresh parsley.
