- Basmati rice - 150 grams
- Vegetable broth - 400 ml
- Olive oil - 2 tablespoons
- Onion, finely chopped - 1 medium
- Garlic, minced - 2 cloves
- Carrot, diced - 1 medium
- Bell pepper, diced - 1 medium
- Zucchini, diced - 1 small
- Orange, zest and juice - 1 medium
- Lemon, zest and juice - 1 medium
- Cumin powder - 1 teaspoon
- Cinnamon powder - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley, chopped - 2 tablespoons
Steps
- Rinse the basmati rice under cold water until the water runs clear, then drain.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic, diced carrot, bell pepper, and zucchini. Cook for another 5 minutes until the vegetables soften.
- Add the rinsed rice to the saucepan and stir for 1-2 minutes to toast the rice slightly.
- Pour in the vegetable broth, orange juice, lemon juice, and add the orange and lemon zests.
- Season with cumin, cinnamon, salt, and black pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit covered for an additional 5 minutes.
- Fluff the rice with a fork, then stir in the chopped parsley before serving.
