- Cauliflower Rice - 200 grams
- Water - 300 ml
- Saffron Threads - 0.5 grams
- Olive Oil - 1 tablespoon
- Garlic - 1 clove, minced
- Onion - 50 grams, finely chopped
- Cumin Powder - 1 teaspoon
- Salt - 0.5 teaspoon
- Black Pepper - 0.25 teaspoon
- Fresh Parsley - 1 tablespoon, chopped
Steps
- In a small bowl, soak the saffron threads in 2 tablespoons of warm water for about 10 minutes to release their flavor.
- In a medium saucepan over medium heat, add olive oil and sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.
- Add the cauliflower rice to the saucepan and stir well to combine with the onion and garlic mixture.
- Pour in the remaining water, soaked saffron with its water, cumin powder, salt, and black pepper. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the cauliflower rice is tender and water is absorbed.
- Remove from heat, fluff with a fork, and garnish with fresh parsley before serving.
