Ingredients

  • Cauliflower Rice - 200 grams
  • Water - 300 ml
  • Saffron Threads - 0.5 grams
  • Olive Oil - 1 tablespoon
  • Garlic - 1 clove, minced
  • Onion - 50 grams, finely chopped
  • Cumin Powder - 1 teaspoon
  • Salt - 0.5 teaspoon
  • Black Pepper - 0.25 teaspoon
  • Fresh Parsley - 1 tablespoon, chopped

Steps

  1. In a small bowl, soak the saffron threads in 2 tablespoons of warm water for about 10 minutes to release their flavor.
  2. In a medium saucepan over medium heat, add olive oil and sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.
  3. Add the cauliflower rice to the saucepan and stir well to combine with the onion and garlic mixture.
  4. Pour in the remaining water, soaked saffron with its water, cumin powder, salt, and black pepper. Stir to combine.
  5. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the cauliflower rice is tender and water is absorbed.
  6. Remove from heat, fluff with a fork, and garnish with fresh parsley before serving.
