Ingredients

  • Basmati rice - 150 grams
  • Chicken thighs, boneless and skinless - 300 grams
  • Almonds, sliced - 50 grams
  • Onion, finely chopped - 1 medium (about 100 grams)
  • Garlic, minced - 2 cloves
  • Chicken broth - 400 ml
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley, chopped - 2 tablespoons
  • Lemon wedges - for serving

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a large pan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for an additional 1 minute until fragrant.
  4. Stir in the chicken thighs, cumin, cinnamon, turmeric, salt, and black pepper. Cook until the chicken is browned on all sides, about 6-7 minutes.
  5. Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer for 10 minutes.
  6. While the chicken is cooking, toast the sliced almonds in a dry skillet over medium heat until golden brown, about 3-4 minutes. Set aside.
  7. Drain the soaked rice and add it to the pan with the chicken. Stir gently to combine, then cover and simmer on low heat for another 15 minutes, or until the rice is cooked and has absorbed the liquid.
  8. Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork and mix in the toasted almonds and chopped parsley.
  9. Serve warm with lemon wedges on the side.
