Ingredients

  • Basmati rice - 150 grams
  • Chicken thighs, boneless and skinless - 250 grams
  • Olive oil - 2 tablespoons
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Carrot, diced - 1 medium
  • Red bell pepper, diced - 1 medium
  • Green peas, frozen - 100 grams
  • Chicken broth - 400 milliliters
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley, chopped - 2 tablespoons
  • Lemon wedges - for serving

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Cut the chicken thighs into bite-sized pieces, season them with salt, pepper, cumin, coriander, and turmeric, then add to the skillet. Cook until the chicken is browned on all sides, about 8-10 minutes.
  5. Stir in the diced carrot and red bell pepper, cooking for another 5 minutes until the vegetables start to soften.
  6. Drain the soaked rice and add it to the skillet, stirring to combine with the chicken and vegetables.
  7. Pour in the chicken broth and bring to a boil. Once boiling, reduce the heat to low, cover the skillet, and let it simmer for 15-20 minutes or until the rice is cooked and has absorbed the liquid.
  8. In the last 5 minutes of cooking, add the frozen green peas to the skillet, stirring gently to incorporate.
  9. Once the rice is cooked, remove from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.
  10. Garnish with fresh parsley and serve with lemon wedges on the side.
