- Basmati rice - 150 grams
- Chicken thighs, boneless and skinless - 250 grams
- Olive oil - 2 tablespoons
- Onion, finely chopped - 1 medium
- Garlic, minced - 2 cloves
- Carrot, diced - 1 medium
- Red bell pepper, diced - 1 medium
- Green peas, frozen - 100 grams
- Chicken broth - 400 milliliters
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley, chopped - 2 tablespoons
- Lemon wedges - for serving
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Cut the chicken thighs into bite-sized pieces, season them with salt, pepper, cumin, coriander, and turmeric, then add to the skillet. Cook until the chicken is browned on all sides, about 8-10 minutes.
- Stir in the diced carrot and red bell pepper, cooking for another 5 minutes until the vegetables start to soften.
- Drain the soaked rice and add it to the skillet, stirring to combine with the chicken and vegetables.
- Pour in the chicken broth and bring to a boil. Once boiling, reduce the heat to low, cover the skillet, and let it simmer for 15-20 minutes or until the rice is cooked and has absorbed the liquid.
- In the last 5 minutes of cooking, add the frozen green peas to the skillet, stirring gently to incorporate.
- Once the rice is cooked, remove from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.
- Garnish with fresh parsley and serve with lemon wedges on the side.
