Ingredients

  • Long-grain rice - 150 grams
  • White fish fillets (e.g., cod or sole) - 200 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Tomato - 1 medium, diced
  • Vegetable broth - 400 ml
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Saffron threads - a pinch
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the long-grain rice under cold water until the water runs clear, then soak it in warm water for 15 minutes.
  2. In a large skillet or pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic, diced carrot, and bell pepper to the skillet, cooking for an additional 3-4 minutes until the vegetables are slightly softened.
  4. Stir in the diced tomato, cumin, paprika, saffron, salt, and black pepper. Cook for another 2 minutes to combine the flavors.
  5. Drain the soaked rice and add it to the skillet, stirring to coat the rice with the vegetable mixture.
  6. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for 15 minutes, or until the rice is cooked and the liquid is absorbed.
  7. While the rice is cooking, season the fish fillets with salt and pepper. In a separate pan, heat a little olive oil over medium heat and cook the fish for about 3-4 minutes on each side, or until cooked through and flaky.
  8. Once the rice is cooked, fluff it with a fork and serve it on plates topped with the fish fillets. Garnish with fresh parsley.
