- Long-grain rice - 150 grams
- White fish fillets (e.g., cod or sole) - 200 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Tomato - 1 medium, diced
- Vegetable broth - 400 ml
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Saffron threads - a pinch
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the long-grain rice under cold water until the water runs clear, then soak it in warm water for 15 minutes.
- In a large skillet or pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced carrot, and bell pepper to the skillet, cooking for an additional 3-4 minutes until the vegetables are slightly softened.
- Stir in the diced tomato, cumin, paprika, saffron, salt, and black pepper. Cook for another 2 minutes to combine the flavors.
- Drain the soaked rice and add it to the skillet, stirring to coat the rice with the vegetable mixture.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for 15 minutes, or until the rice is cooked and the liquid is absorbed.
- While the rice is cooking, season the fish fillets with salt and pepper. In a separate pan, heat a little olive oil over medium heat and cook the fish for about 3-4 minutes on each side, or until cooked through and flaky.
- Once the rice is cooked, fluff it with a fork and serve it on plates topped with the fish fillets. Garnish with fresh parsley.
