Ingredients

  • Basmati rice - 150 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Green bell pepper - 1, diced
  • Tomato - 1 large, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Cayenne pepper - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Vegetable broth - 300 milliliters

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and sauté for another minute until fragrant.
  4. Stir in the diced red and green bell peppers and cook for about 5 minutes until they start to soften.
  5. Add the chopped tomato, cayenne pepper, paprika, salt, and black pepper to the pot, and cook for another 3-4 minutes until the tomatoes break down slightly.
  6. Drain the soaked rice and add it to the pot, stirring well to combine with the vegetables and spices.
  7. Pour in the vegetable broth, bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
  8. Remove from heat, fluff the rice with a fork, and stir in the chopped parsley before serving.
