- Basmati rice - 150 grams
- Olive oil - 2 tablespoons

- Garlic - 2 cloves, minced
- Red bell pepper - 1, diced
- Green bell pepper - 1, diced
- Tomato - 1 large, chopped
- Fresh parsley - 2 tablespoons, chopped
- Cayenne pepper - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Vegetable broth - 300 milliliters
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the diced red and green bell peppers and cook for about 5 minutes until they start to soften.
- Add the chopped tomato, cayenne pepper, paprika, salt, and black pepper to the pot, and cook for another 3-4 minutes until the tomatoes break down slightly.
- Drain the soaked rice and add it to the pot, stirring well to combine with the vegetables and spices.
- Pour in the vegetable broth, bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
- Remove from heat, fluff the rice with a fork, and stir in the chopped parsley before serving.
