Ingredients
- Basmati rice - 150 grams
- Water - 300 milliliters
- Honey - 2 tablespoons (30 grams)
- Olive oil - 1 tablespoon (15 milliliters)
- Cinnamon - 1 teaspoon (2 grams)
- Salt - 1/2 teaspoon (3 grams)
- Almonds, sliced - 30 grams
- Raisins - 30 grams
- Fresh mint leaves - a handful
Steps
- Rinse the basmati rice under cold water until the water runs clear to remove excess starch.
- In a medium saucepan, combine the rinsed rice, water, and salt. Bring to a boil over high heat.
- Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes or until the water is absorbed.
- In a separate small skillet, heat the olive oil over medium heat. Add the sliced almonds and toast them for about 3-5 minutes until golden brown, stirring frequently to prevent burning.
- Once the rice is cooked, remove it from heat and fluff it with a fork. Stir in the honey, cinnamon, toasted almonds, and raisins until well combined.
- Let the rice sit covered for an additional 5 minutes to allow the flavors to meld.
- Serve warm, garnished with fresh mint leaves.
