Ingredients

  • Basmati rice - 150 grams
  • Water - 300 milliliters
  • Honey - 2 tablespoons (30 grams)
  • Olive oil - 1 tablespoon (15 milliliters)
  • Cinnamon - 1 teaspoon (2 grams)
  • Salt - 1/2 teaspoon (3 grams)
  • Almonds, sliced - 30 grams
  • Raisins - 30 grams
  • Fresh mint leaves - a handful

Steps

  1. Rinse the basmati rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine the rinsed rice, water, and salt. Bring to a boil over high heat.
  3. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes or until the water is absorbed.
  4. In a separate small skillet, heat the olive oil over medium heat. Add the sliced almonds and toast them for about 3-5 minutes until golden brown, stirring frequently to prevent burning.
  5. Once the rice is cooked, remove it from heat and fluff it with a fork. Stir in the honey, cinnamon, toasted almonds, and raisins until well combined.
  6. Let the rice sit covered for an additional 5 minutes to allow the flavors to meld.
  7. Serve warm, garnished with fresh mint leaves.
