Ingredients

  • Jasmine rice - 100 grams
  • Almond milk - 400 milliliters
  • Honey - 2 tablespoons
  • Cinnamon powder - 1 teaspoon
  • Cardamom powder - 1/2 teaspoon
  • Dried apricots - 50 grams, chopped
  • Walnuts - 30 grams, chopped
  • Salt - 1/4 teaspoon
  • Vanilla extract - 1/2 teaspoon

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine the rinsed rice, almond milk, and salt. Bring to a simmer over medium heat.
  3. Once simmering, reduce the heat to low, cover the saucepan, and cook for about 18-20 minutes, or until the rice is tender and has absorbed most of the almond milk.
  4. Stir in the honey, cinnamon, cardamom, vanilla extract, and chopped dried apricots, and cook for an additional 5 minutes, stirring gently.
  5. Remove from heat and let it sit for a few minutes to thicken. Serve warm, garnished with chopped walnuts.
