- Basmati rice - 150 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Green peas - 100 grams, fresh or frozen
- Curry powder - 1 tablespoon
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable broth - 400 milliliters
- Fresh cilantro - a handful, chopped (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, diced carrot, and diced red bell pepper. Cook for another 5 minutes until the vegetables are slightly softened.
- Add the curry powder, cumin, salt, and black pepper to the pan, stirring well to coat the vegetables with the spices.
- Drain the soaked rice and add it to the saucepan, stirring to combine with the vegetable mixture.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
- In the last 5 minutes of cooking, stir in the green peas.
- Once cooked, fluff the rice with a fork and let it sit for a few minutes before serving. Garnish with chopped fresh cilantro.
