Ingredients

  • Basmati rice - 150 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Green peas - 100 grams, fresh or frozen
  • Curry powder - 1 tablespoon
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable broth - 400 milliliters
  • Fresh cilantro - a handful, chopped (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic, diced carrot, and diced red bell pepper. Cook for another 5 minutes until the vegetables are slightly softened.
  4. Add the curry powder, cumin, salt, and black pepper to the pan, stirring well to coat the vegetables with the spices.
  5. Drain the soaked rice and add it to the saucepan, stirring to combine with the vegetable mixture.
  6. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.
  7. In the last 5 minutes of cooking, stir in the green peas.
  8. Once cooked, fluff the rice with a fork and let it sit for a few minutes before serving. Garnish with chopped fresh cilantro.
