  • Almonds - 30 grams, sliced

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  3. Stir in the cauliflower rice, lemon zest, ground cumin, and ground coriander, cooking for about 5 minutes until the cauliflower is tender.
  4. Add the lemon juice, salt, and pepper, mixing well to combine all ingredients.
  5. Reduce the heat to low and stir in the chopped parsley.
  6. Toast the sliced almonds in a separate dry pan over medium heat for 3-4 minutes until golden brown.
  7. Serve the cauliflower rice topped with toasted almonds and extra parsley if desired.
