- Beef stew meat - 300 grams
- Basmati rice - 150 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Tomato paste - 2 tablespoons
- Cinnamon stick - 1
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Water - 500 milliliters
- Chickpeas - 100 grams, drained and rinsed
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and diced carrot, and cook for an additional 3 minutes.
- Stir in the beef stew meat and brown on all sides, about 5-7 minutes.
- Add the tomato paste, cinnamon stick, cumin, paprika, salt, and black pepper. Stir well to coat the meat.
- Pour in the water and bring to a boil. Reduce the heat, cover, and let simmer for 30 minutes until the beef is tender.
- While the beef is cooking, rinse the basmati rice under cold water until the water runs clear. Drain well.
- After 30 minutes, add the rinsed rice and chickpeas to the pot. Stir gently to combine.
- Cover the pot and cook on low heat for an additional 15-20 minutes, or until the rice is cooked and has absorbed the liquid.
- Remove the pot from heat and let it sit, covered, for 5 minutes before fluffing the rice with a fork.
- Serve hot, garnished with fresh parsley.
