Ingredients

  • Beef stew meat - 300 grams
  • Basmati rice - 150 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Tomato paste - 2 tablespoons
  • Cinnamon stick - 1
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Water - 500 milliliters
  • Chickpeas - 100 grams, drained and rinsed
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and diced carrot, and cook for an additional 3 minutes.
  3. Stir in the beef stew meat and brown on all sides, about 5-7 minutes.
  4. Add the tomato paste, cinnamon stick, cumin, paprika, salt, and black pepper. Stir well to coat the meat.
  5. Pour in the water and bring to a boil. Reduce the heat, cover, and let simmer for 30 minutes until the beef is tender.
  6. While the beef is cooking, rinse the basmati rice under cold water until the water runs clear. Drain well.
  7. After 30 minutes, add the rinsed rice and chickpeas to the pot. Stir gently to combine.
  8. Cover the pot and cook on low heat for an additional 15-20 minutes, or until the rice is cooked and has absorbed the liquid.
  9. Remove the pot from heat and let it sit, covered, for 5 minutes before fluffing the rice with a fork.
  10. Serve hot, garnished with fresh parsley.
