- Basmati rice - 150 grams
- Water - 300 ml
- Raisins - 50 grams
- Sliced almonds - 30 grams
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cinnamon powder - 1/2 teaspoon
- Cumin powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 20 minutes, then drain.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, cinnamon, cumin, salt, and black pepper to the saucepan, stirring for an additional minute until fragrant.
- Add the drained rice to the saucepan and stir to coat the rice with the onion and spice mixture.
- Pour in 300 ml of water and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes until the rice is tender and the water is absorbed.
- While the rice is cooking, toast the sliced almonds in a dry skillet over medium heat for about 3-5 minutes, stirring frequently until golden brown.
- After the rice is cooked, remove it from the heat and let it sit, covered, for 5 minutes. Then, fluff the rice with a fork and gently fold in the raisins and toasted almonds.
- Serve warm, garnished with fresh parsley.
