Ingredients

  • Basmati rice - 150 grams
  • Water - 300 ml
  • Raisins - 50 grams
  • Sliced almonds - 30 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cinnamon powder - 1/2 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 20 minutes, then drain.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic, cinnamon, cumin, salt, and black pepper to the saucepan, stirring for an additional minute until fragrant.
  4. Add the drained rice to the saucepan and stir to coat the rice with the onion and spice mixture.
  5. Pour in 300 ml of water and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes until the rice is tender and the water is absorbed.
  6. While the rice is cooking, toast the sliced almonds in a dry skillet over medium heat for about 3-5 minutes, stirring frequently until golden brown.
  7. After the rice is cooked, remove it from the heat and let it sit, covered, for 5 minutes. Then, fluff the rice with a fork and gently fold in the raisins and toasted almonds.
  8. Serve warm, garnished with fresh parsley.
