Ingredients

  • Basmati rice - 150 grams
  • Water - 400 ml
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Cinnamon powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Raisins - 50 grams
  • Chickpeas (cooked) - 100 grams
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic, cumin, cinnamon, salt, and black pepper. Cook for another minute until fragrant.
  4. Drain the soaked rice and add it to the pot, stirring well to coat the rice with the spices.
  5. Add 400 ml of water and the raisins to the pot. Bring to a boil, then reduce the heat to low and cover the pot with a lid.
  6. Cook for 15 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit, covered, for an additional 5 minutes.
  7. Fluff the rice with a fork, then gently fold in the cooked chickpeas and chopped parsley. Serve warm.
