- Basmati rice - 150 grams
- Water - 400 ml
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Cinnamon powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Raisins - 50 grams
- Chickpeas (cooked) - 100 grams
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, cumin, cinnamon, salt, and black pepper. Cook for another minute until fragrant.
- Drain the soaked rice and add it to the pot, stirring well to coat the rice with the spices.
- Add 400 ml of water and the raisins to the pot. Bring to a boil, then reduce the heat to low and cover the pot with a lid.
- Cook for 15 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork, then gently fold in the cooked chickpeas and chopped parsley. Serve warm.
