- Vegetable broth - 300 milliliters
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a medium pot, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- Add the minced garlic to the pot and sauté for another minute until fragrant.
- Stir in the cumin, coriander, and paprika, cooking for an additional minute to toast the spices.
- Drain the soaked rice and add it to the pot, stirring to coat the rice with the spices and onion mixture.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for 15 minutes.
- After 15 minutes, add the fava beans to the pot, gently stirring to combine without breaking the beans.
- Cover the pot again and let it cook for an additional 5 minutes, or until the rice is tender and has absorbed all the liquid.
- Remove the pot from heat and let it sit, covered, for 5 minutes before fluffing the rice with a fork.
- Serve the rice with fava beans in bowls, garnished with chopped fresh parsley.
