Ingredients

  • Basmati rice - 150 grams
  • Fava beans (cooked or canned) - 200 grams

  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 300 milliliters
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a medium pot, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  3. Add the minced garlic to the pot and sauté for another minute until fragrant.
  4. Stir in the cumin, coriander, and paprika, cooking for an additional minute to toast the spices.
  5. Drain the soaked rice and add it to the pot, stirring to coat the rice with the spices and onion mixture.
  6. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for 15 minutes.
  7. After 15 minutes, add the fava beans to the pot, gently stirring to combine without breaking the beans.
  8. Cover the pot again and let it cook for an additional 5 minutes, or until the rice is tender and has absorbed all the liquid.
  9. Remove the pot from heat and let it sit, covered, for 5 minutes before fluffing the rice with a fork.
  10. Serve the rice with fava beans in bowls, garnished with chopped fresh parsley.
