Ingredients
- Rghaif flatbreads - 2 pieces
- Olive oil - 2 tablespoons
- Cherry tomatoes - 150 grams, halved
- Bell pepper (red or yellow) - 1 medium, diced
- Zucchini - 1 medium, sliced
- Red onion - 1 small, thinly sliced
- Feta cheese - 50 grams, crumbled
- Kalamata olives - 30 grams, pitted and sliced
- Fresh parsley - 2 tablespoons, chopped
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced red onion and sauté for 3-4 minutes until softened.
- Add the diced bell pepper and zucchini to the skillet. Sauté for an additional 5 minutes until the vegetables are tender.
- Stir in the halved cherry tomatoes, cumin powder, paprika, salt, and black pepper. Cook for another 2-3 minutes until the tomatoes start to soften.
- Remove the skillet from heat and stir in the Kalamata olives and fresh parsley.
- Place the Rghaif flatbreads on a baking sheet. Brush the tops with the remaining tablespoon of olive oil.
- Spread the vegetable mixture evenly over the flatbreads, then sprinkle with crumbled feta cheese.
- Bake in the preheated oven for 10-12 minutes until the edges are crispy and the cheese is slightly golden.
- Remove from the oven, allow to cool for a couple of minutes, then slice and serve warm.
