Ingredients

  • Rghaif flatbreads - 2 pieces
  • Olive oil - 2 tablespoons
  • Cherry tomatoes - 150 grams, halved
  • Bell pepper (red or yellow) - 1 medium, diced
  • Zucchini - 1 medium, sliced
  • Red onion - 1 small, thinly sliced
  • Feta cheese - 50 grams, crumbled
  • Kalamata olives - 30 grams, pitted and sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced red onion and sauté for 3-4 minutes until softened.
  3. Add the diced bell pepper and zucchini to the skillet. Sauté for an additional 5 minutes until the vegetables are tender.
  4. Stir in the halved cherry tomatoes, cumin powder, paprika, salt, and black pepper. Cook for another 2-3 minutes until the tomatoes start to soften.
  5. Remove the skillet from heat and stir in the Kalamata olives and fresh parsley.
  6. Place the Rghaif flatbreads on a baking sheet. Brush the tops with the remaining tablespoon of olive oil.
  7. Spread the vegetable mixture evenly over the flatbreads, then sprinkle with crumbled feta cheese.
  8. Bake in the preheated oven for 10-12 minutes until the edges are crispy and the cheese is slightly golden.
  9. Remove from the oven, allow to cool for a couple of minutes, then slice and serve warm.
