- All-purpose flour - 150 grams
- Warm water - 75 ml
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Zaatar spice mix - 1 teaspoon
- Cherry tomatoes - 100 grams, halved
- Bell pepper - 1 medium, diced
- Red onion - 1 small, thinly sliced
- Spinach - 50 grams, chopped
- Feta cheese - 50 grams, crumbled
- Black olives - 30 grams, sliced
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a mixing bowl, combine the flour and salt. Gradually add warm water and olive oil, mixing until a soft dough forms.
- Knead the dough for about 5 minutes on a floured surface until smooth. Cover with a damp cloth and let it rest for 15 minutes.
- Divide the dough into two equal portions. Roll each portion into a thin circle, about 20 cm in diameter.
- In a skillet over medium heat, add a drizzle of olive oil and sauté the red onion until translucent, about 3-4 minutes.
- Add the diced bell pepper and cherry tomatoes to the skillet, cooking for an additional 3-4 minutes until softened. Stir in the chopped spinach and remove from heat.
- Sprinkle the zaatar spice mix over the vegetable mixture and stir to combine.
- Preheat a non-stick skillet or frying pan over medium heat. Place one rolled dough circle in the pan and cook for 2-3 minutes until lightly golden.
- Flip the dough and quickly spread half of the vegetable mixture on top. Sprinkle with crumbled feta cheese, sliced olives, and chopped parsley.
- Cook for another 3-4 minutes until the bottom is golden and the cheese is slightly melted. Repeat with the second dough circle and remaining filling.
- Cut into wedges and serve warm.
