Ingredients

  • All-purpose flour - 150 grams
  • Warm water - 75 ml
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Zaatar spice mix - 1 teaspoon
  • Cherry tomatoes - 100 grams, halved
  • Bell pepper - 1 medium, diced
  • Red onion - 1 small, thinly sliced
  • Spinach - 50 grams, chopped
  • Feta cheese - 50 grams, crumbled
  • Black olives - 30 grams, sliced
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a mixing bowl, combine the flour and salt. Gradually add warm water and olive oil, mixing until a soft dough forms.
  2. Knead the dough for about 5 minutes on a floured surface until smooth. Cover with a damp cloth and let it rest for 15 minutes.
  3. Divide the dough into two equal portions. Roll each portion into a thin circle, about 20 cm in diameter.
  4. In a skillet over medium heat, add a drizzle of olive oil and sauté the red onion until translucent, about 3-4 minutes.
  5. Add the diced bell pepper and cherry tomatoes to the skillet, cooking for an additional 3-4 minutes until softened. Stir in the chopped spinach and remove from heat.
  6. Sprinkle the zaatar spice mix over the vegetable mixture and stir to combine.
  7. Preheat a non-stick skillet or frying pan over medium heat. Place one rolled dough circle in the pan and cook for 2-3 minutes until lightly golden.
  8. Flip the dough and quickly spread half of the vegetable mixture on top. Sprinkle with crumbled feta cheese, sliced olives, and chopped parsley.
  9. Cook for another 3-4 minutes until the bottom is golden and the cheese is slightly melted. Repeat with the second dough circle and remaining filling.
  10. Cut into wedges and serve warm.
