Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 100 ml
  • Salt - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Semolina - 50 grams
  • Cumin powder - 1/2 teaspoon
  • Ground coriander - 1/2 teaspoon

Steps

  1. In a mixing bowl, combine the all-purpose flour and salt. Gradually add warm water while mixing until a dough forms.
  2. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. Cover with a damp cloth and let it rest for 15 minutes.
  3. After resting, divide the dough into 4 equal pieces and shape each piece into a ball. Flatten each ball slightly and brush with olive oil.
  4. Sprinkle semolina, cumin powder, and ground coriander over each piece. Roll out each piece into a thin circle, about 30 cm in diameter.
  5. Heat a non-stick skillet over medium heat. Cook each flatbread for about 2-3 minutes on each side, or until golden brown and crispy.
  6. Remove from the skillet and keep warm. Serve the Rghaif with a drizzle of olive oil or your choice of vegan spread.
