Rghaif is a traditional Moroccan breakfast dish, featuring flaky, layered flatbreads that are beautifully crisp and often enjoyed with a drizzle of olive oil or honey. This vegan version captures the essence of Moroccan cuisine while providing a delightful start to the day.

Ingredients
- All-purpose flour - 200 grams
- Warm water - 100 ml
- Salt - 1 teaspoon
- Olive oil - 2 tablespoons
- Semolina - 50 grams
- Cumin powder - 1/2 teaspoon
- Ground coriander - 1/2 teaspoon
Steps
- In a mixing bowl, combine the all-purpose flour and salt. Gradually add warm water while mixing until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. Cover with a damp cloth and let it rest for 15 minutes.
- After resting, divide the dough into 4 equal pieces and shape each piece into a ball. Flatten each ball slightly and brush with olive oil.
- Sprinkle semolina, cumin powder, and ground coriander over each piece. Roll out each piece into a thin circle, about 30 cm in diameter.
- Heat a non-stick skillet over medium heat. Cook each flatbread for about 2-3 minutes on each side, or until golden brown and crispy.
- Remove from the skillet and keep warm. Serve the Rghaif with a drizzle of olive oil or your choice of vegan spread.
