Ingredients

  • Whole wheat flour - 200 grams
  • Water - 100 ml
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Green lentils - 100 grams
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Cumin powder - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Fresh parsley - a handful, chopped
  • Lemon - 1, juiced

Steps

  1. In a mixing bowl, combine whole wheat flour and salt, then slowly add water and olive oil. Knead until a smooth dough forms. Cover and let it rest for 30 minutes.
  2. In a saucepan, heat a little olive oil over medium heat. Add chopped onion and garlic, sauté until translucent.
  3. Add diced carrots and zucchini to the onion mixture. Stir for about 5 minutes until slightly softened.
  4. Rinse the green lentils and add them to the saucepan. Pour in vegetable broth and season with cumin, cinnamon, turmeric, and paprika. Bring to a boil, then reduce heat and simmer for 20 minutes until lentils are cooked through.
  5. While the stew simmers, divide the dough into two equal parts. Roll each piece into a thin circle (about 2 mm thick) on a floured surface.
  6. In a non-stick skillet, cook each dough circle over medium heat for about 2-3 minutes on each side until lightly golden and cooked through. Remove and keep warm.
  7. Once the lentil stew is done, stir in chopped parsley and lemon juice. Adjust seasoning to taste.
  8. To serve, layer the cooked dough on a plate, spoon the lentil and vegetable stew on top, and garnish with additional parsley.
