Ingredients
- Whole wheat flour - 200 grams
- Water - 100 ml
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Green lentils - 100 grams
- Carrot - 1 medium, diced
- Zucchini - 1 medium, diced
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 500 ml
- Cumin powder - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Paprika - 1 teaspoon
- Fresh parsley - a handful, chopped
- Lemon - 1, juiced
Steps
- In a mixing bowl, combine whole wheat flour and salt, then slowly add water and olive oil. Knead until a smooth dough forms. Cover and let it rest for 30 minutes.
- In a saucepan, heat a little olive oil over medium heat. Add chopped onion and garlic, sauté until translucent.
- Add diced carrots and zucchini to the onion mixture. Stir for about 5 minutes until slightly softened.
- Rinse the green lentils and add them to the saucepan. Pour in vegetable broth and season with cumin, cinnamon, turmeric, and paprika. Bring to a boil, then reduce heat and simmer for 20 minutes until lentils are cooked through.
- While the stew simmers, divide the dough into two equal parts. Roll each piece into a thin circle (about 2 mm thick) on a floured surface.
- In a non-stick skillet, cook each dough circle over medium heat for about 2-3 minutes on each side until lightly golden and cooked through. Remove and keep warm.
- Once the lentil stew is done, stir in chopped parsley and lemon juice. Adjust seasoning to taste.
- To serve, layer the cooked dough on a plate, spoon the lentil and vegetable stew on top, and garnish with additional parsley.
