Ingredients
- Green lentils - 100 grams
- Chickpeas (cooked or canned) - 100 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Zucchini - 1 medium, diced
- Tomato - 1 medium, chopped
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh coriander - for garnish
- Msemen (Moroccan flatbread) - 2 pieces
Steps
- Rinse the green lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced carrot, and zucchini to the pot. Cook for another 5 minutes, stirring occasionally.
- Stir in the chopped tomato, cumin, cinnamon, turmeric, paprika, salt, and black pepper. Cook for 3-4 minutes until the tomatoes soften.
- Add the rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat to low and cover. Simmer for about 25 minutes, or until the lentils are tender.
- While the lentils are cooking, prepare the msemen according to your preferred recipe or use store-bought. Warm them in a skillet until slightly crispy.
- Once the lentils are cooked, stir in the cooked chickpeas and let it heat through for 5 more minutes.
- Serve the lentil and chickpea mixture over the msemen, garnished with fresh coriander.
