Ingredients

  • Green lentils - 100 grams
  • Chickpeas (cooked or canned) - 100 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Tomato - 1 medium, chopped
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh coriander - for garnish
  • Msemen (Moroccan flatbread) - 2 pieces

Steps

  1. Rinse the green lentils under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic, diced carrot, and zucchini to the pot. Cook for another 5 minutes, stirring occasionally.
  4. Stir in the chopped tomato, cumin, cinnamon, turmeric, paprika, salt, and black pepper. Cook for 3-4 minutes until the tomatoes soften.
  5. Add the rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat to low and cover. Simmer for about 25 minutes, or until the lentils are tender.
  6. While the lentils are cooking, prepare the msemen according to your preferred recipe or use store-bought. Warm them in a skillet until slightly crispy.
  7. Once the lentils are cooked, stir in the cooked chickpeas and let it heat through for 5 more minutes.
  8. Serve the lentil and chickpea mixture over the msemen, garnished with fresh coriander.
