Ingredients
- Zucchini - 2 medium
- Chicken thighs - 300 grams, boneless and skinless
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chicken broth - 250 ml
- Fresh cilantro - 2 tablespoons, chopped
Steps
- Spiralize the zucchini using a spiralizer or julienne peeler to create zucchini noodles and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and grated ginger, stirring for another minute until fragrant.
- Season the chicken thighs with cumin, cinnamon, turmeric, paprika, salt, and black pepper. Add the chicken to the skillet, browning it for about 5 minutes on each side.
- Pour in the chicken broth, cover, and let it simmer for 10-15 minutes until the chicken is cooked through and tender.
- Remove the chicken from the skillet, shred it using two forks, and return it to the skillet, mixing it with the sauce.
- In a separate pan, lightly sauté the zucchini noodles for 2-3 minutes until just tender.
- Serve the zucchini noodles topped with the chicken and sauce, garnished with fresh cilantro.
