Ingredients

  • Zucchini - 2 medium
  • Chicken thighs - 300 grams, boneless and skinless
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chicken broth - 250 ml
  • Fresh cilantro - 2 tablespoons, chopped

Steps

  1. Spiralize the zucchini using a spiralizer or julienne peeler to create zucchini noodles and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and grated ginger, stirring for another minute until fragrant.
  4. Season the chicken thighs with cumin, cinnamon, turmeric, paprika, salt, and black pepper. Add the chicken to the skillet, browning it for about 5 minutes on each side.
  5. Pour in the chicken broth, cover, and let it simmer for 10-15 minutes until the chicken is cooked through and tender.
  6. Remove the chicken from the skillet, shred it using two forks, and return it to the skillet, mixing it with the sauce.
  7. In a separate pan, lightly sauté the zucchini noodles for 2-3 minutes until just tender.
  8. Serve the zucchini noodles topped with the chicken and sauce, garnished with fresh cilantro.
