- Chicken breast - 200 grams (diced)
- Olive oil - 2 tablespoons
- Onion - 1 medium (finely chopped)
- Garlic - 2 cloves (minced)
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chicken broth - 250 ml
- Fresh parsley - 2 tablespoons (chopped)
- Lemon juice - 1 tablespoon
Steps
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and minced garlic, sauté until the onion is translucent.
- Stir in the diced chicken breast, cooking until browned on all sides.
- Add the ground cumin, ground coriander, paprika, salt, and black pepper; mix well to coat the chicken.
- Pour in the chicken broth and bring to a simmer, cooking for about 10 minutes until the chicken is cooked through.
- Add the spiralized zucchini noodles to the skillet and cook for an additional 5 minutes until just tender.
- Remove from heat, stir in the lemon juice and chopped parsley, and serve immediately.
