Ingredients

  • Zucchini - 2 medium (spiralized into noodles)
  • Chicken breast - 200 grams (diced)
  • Olive oil - 2 tablespoons
  • Onion - 1 medium (finely chopped)
  • Garlic - 2 cloves (minced)
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chicken broth - 250 ml
  • Fresh parsley - 2 tablespoons (chopped)
  • Lemon juice - 1 tablespoon

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and minced garlic, sauté until the onion is translucent.
  3. Stir in the diced chicken breast, cooking until browned on all sides.
  4. Add the ground cumin, ground coriander, paprika, salt, and black pepper; mix well to coat the chicken.
  5. Pour in the chicken broth and bring to a simmer, cooking for about 10 minutes until the chicken is cooked through.
  6. Add the spiralized zucchini noodles to the skillet and cook for an additional 5 minutes until just tender.
  7. Remove from heat, stir in the lemon juice and chopped parsley, and serve immediately.
